Ingredients for Stuffed Artichoke Recipe with Avocado
- 2 artichokes
- 1 medium-sized ripe avocado
- 1 onion
- 1 lemon
- 1 clove of garlic
- 1 piece of sugar
- 1 tablespoon of curd cheese
- 1/4 zucchini
- 1/4 carrot
- 2 tablespoons Nizolive cold pressed olive oil
- 1 teaspoon salt
How to Make Stuffed Artichoke Recipe with Avocado?
- Clean the artichokes. Arrange the artichokes you cleaned in the pot.
- Mix sugar, salt, juice of half a lemon, olive oil and water in a separate bowl. Pour over your artichokes. Start cooking over low heat so that they do not fall apart.
- While the artichokes are cooking, start preparing the filling. Peel the onion and chop it coarsely. Add olive oil to the pan and fry the onions.
- In the meantime, check the artichokes frequently. Pour the water over them with a spoon. When you are about to remove from the stove, distribute the roasted onions evenly to the two artichokes. Cook for 2 more minutes and turn off the stove.
- Cut the avocado in half and remove the pit. Remove the avocados with the help of a spoon, put them in a bowl and mash them with a fork. Squeeze the juice of half a lemon into it. Grate 1 clove of garlic, add a little salt and mix.
- Peel the carrot and zucchini. Make thin strips with the help of a peeler and mix them raw with avocado.
- Add the avocado mixture on top of the cooked artichokes, sprinkle with curd cheese and serve after resting for at least 2-3 hours.
