Discover the process gifted to us by nature.
From the first light of October to the final days of November, unripe green olives are carefully harvested without ever touching the soil. They are placed in breathable 20 to 25 kg crates, preserving their natural freshness just as they were at the moment of picking.

The olives are transported to the mill the very same day, without any waiting, and immediately processed. Freshness is the first principle of production.

Crates prevent the overheating and aroma loss often seen in sacks, allowing the oil to maintain its pure character and the spirit of the harvest. Processed below 22°C using a two phase Cold Press system, the olives retain their vitamins, phenolic compounds, and all their beneficial properties in the most natural form.

The produced oils are carefully evaluated with preliminary analyses at our facility and then safely rested in stainless steel chrome tanks.

The storage area where the chrome tanks are kept is climate controlled between 18 and 22°C, ensuring the quality of every drop throughout the year.

With its green fruity aroma, the oil offers a noticeable bitterness on the palate and a pleasant peppery sensation in the throat, a true signature of fresh harvest.

Rich in vitamin E, bio phenols, and natural antioxidants, this oil contains its most valuable health components at the highest levels.

Usage Suggestions:
On an empty stomach in the morning: Its high polyphenol content provides a natural antioxidant effect when consumed as one tablespoon daily.

At breakfast: Enjoy by dipping bread after mixing with zaatar, chili flakes, or thyme.

For cold dishes: Ideal as a flavor enhancer for salads, mezes, hummus, cheese plates, and breakfast foods.

As a finishing touch in hot dishes: Drizzle over rice, pasta, grilled vegetables, or fish after cooking to preserve its aroma.
