For a light dinner or a delicious starter, yogurt soup is the perfect option.
Ingredients
- 100 grams basmati rice
- 1 liter of water
- 5 cups of yogurt
- 1 medium egg at room temperature
- 1 tablespoon flour
- salt
- 2 tablespoons Niz Olive early harvest olive oil
- 1 tablespoon dried mint
- Put the washed and drained rice in a pot.
- Add the water, turn on the heat and bring it to a boil.
- When it starts to boil, cook with the lid closed until the rice is completely boiled.
- After 30 minutes, if the rice is not completely soft, add a little more water and cook for another 10 minutes.
- Put the yogurt in a large bowl.
- Break the egg into it.
- Add the flour and salt and whisk well.
- With the help of a ladle, take the boiled rice and water, add it to the yogurt mixture and mix well.
- Add this mixture to the pot with a ladle.
- Repeat the same step 1-2 more times.
- Stir the soup well and turn the heat back on low.
- Cook for 10-15 minutes in total, stirring occasionally.
- Put the olive oil in a sauce pan.
- When the oil is hot, add the dried mint, wait for 30 seconds and turn off the heat.
- Pour the mint and olive oil mixture over the cooked soup and stir.
- Serve the soup hot.
