Some dishes require a lot of labor and precision. One of the first delicacies that comes to mind when we think of delicate food is stuffed zucchini blossoms. Especially in the Aegean and Mediterranean regions, stuffed zucchini blossoms begin their journey in the early hours of the morning, before the sun has risen. This is because the hours when the zucchini flowers are fully open and not worn out by the heat correspond to the hours before the sun rises in the morning. The flowers must be fruitless. Ingredients for Stuffed Zucchini Blossoms:
- 12 zucchini flowers
- 1 medium sized onion
- 5 tablespoons Niz Olive Olive Oil
- 1.5 cups rice (soaked in hot water, drained)
- 2 tablespoons pine nuts
- 2 tablespoons of currants
- 1 teaspoon cinnamon
- Half a teaspoon of salt
- Half a teaspoon of black pepper
- Half teaspoon allspice
- 1 teaspoon salt
- Half a handful of dill
- 1 cup hot water (for rice)
- 1 cup hot water (to cook the dolmas)
Preparation:
- First add half of the olive oil and then the onions to the pan and continue to fry over medium heat until the onions are caramelized.
- Then you can add the rice.
- After roasting the rice for a while, you can add the spices, currants and pine nuts.
- At the point where the rice starts to turn transparent, add the dill and stir.
- Then add the hot water to the pan, turn the heat down and let it cook with the lid closed until the rice absorbs the water.
- While the stuffing is cooking, remove the zucchini flowers.
- After the stuffing is cooked, let it cool for a while. Then you can stuff your zucchini flowers.
- At the last stage, place the stuffed zucchini flowers in the pot as tightly as possible so that they do not fall apart. Add the hot water and place a plate over the pot to weigh them down and prevent them from falling apart.
- Close the lid of your pot and leave it to cook over low heat.
