How to Make Eggplant Based Fit Pizza?
After dicing the eggplants, we cut them into strips. It should be neither too thick nor too thin. We keep it in salty water for at least 15 minutes to get the bitterness. We take the eggplants out of the water and dry them and bake them in a preheated oven at 180 degrees, preheated on the lower-upper setting for about 15 minutes.
Grate 2 tomatoes and cook for 10 minutes with 1 clove of crushed garlic, 1 tablespoon of olive oil and 1 teaspoon each of salt and black pepper. Distribute the tomato sauce evenly on the eggplants we took out of the oven.
Cover the eggplants with fresh cheddar cheese.
Garnish with sausage, green olives and cherry tomatoes.
We cook our fit pizzas in a heated oven for about 10 minutes until the cheese melts.
