During the early harvest season that spans from early October to the end of November, olives are carefully picked while still green and placed into breathable crates without ever touching the ground. They are transported to the mill on the same day. By avoiding transport in sacks, overheating is prevented and the natural aroma of the fruit is preserved.
The two phase Cold Press method applied below 22°C carries the olive’s hidden freshness, phenolic compounds and vitamins into the soul of the oil in their purest form.
The produced olive oil is rested in climate controlled stainless steel tanks and every drop is carefully analyzed and protected.
